Product details

• Tapioca-starch pearls, medium size, black, caramel flavoured
• One scoop per cup gives about 30 cups per bag
• 1,000 g per bag, Thai FDA certified

Cooking (per 1 kg)

• 1 kg pearls : 500 g dark brown sugar : 5 L water
• Bring 5 L of water to the boil and add the pearls, stirring in small circles so they lift off the base
• Boil 30 minutes, adding the brown sugar at the 15 minute mark
• Take off the heat, cover and rest a further 30 minutes
• Set aside 2,500 ml of the cooking syrup, rinse the pearls, then return them to that syrup

Serving

• Best within 4 hours of cooking; do not hold them overnight

Storage

• Below 30°C, dry and out of direct sunlight
• Once opened, use within 7 days
• Shelf life 6 months
