Why shops use it

• Roe-size pearls pass through a straw instead of blocking it
• Boils without sticking to the pot, in full or half batches

Product details

• Tapioca-starch pearls, small, golden yellow
• One scoop per cup gives about 30 cups per bag
• 1,000 g per bag, Thai FDA certified
• Made to order rather than held in stock, for texture

Cooking (per 1 kg)

• Bring 5 L of water to the boil and add 1 kg of pearls
• Stir in small circles so they lift and spread, then boil 30 minutes
• Add 500 g of dark brown sugar at the 15 minute mark
• Take off the heat, cover and rest a further 30 minutes
• Set aside 2,500 ml of the cooking syrup, rinse the pearls, then return them to that syrup

Serving

• Best within 4–5 hours; sweeten further with honey, sugar syrup or brown sugar if wanted

Storage

• Below 30°C, dry and out of direct sunlight
• Once opened, keep dry and use within 5 days
